Imagine you have a super cold ice cube, and instead of melting into water, it turns into a mist and disappears! That's what happens to the water inside fruits during the freeze-drying process. A special machine is used to freeze the fruit and then take away the ice in the food, without getting wet. This means the food stays looking and tasting just like it did before it was frozen, and it doesn't get squishy. Most importantly, fruits don’t lose any of the nutrients during the process.
